2 Tbsps olive oil
1 onion (finely chopped)
1 chili pepper (seeds removed, finely chopped)
14 ozs canned Tomatoes
½ tsp sugar
½ tsp Tabasco sauce
Sea salt
lemon juice
8 ozs cooked crayfish (cut into pieces)
12 mini Sesame seed rolls
12 slices cherry Tomatoes
Lettuce
cracked Black pepper

Preparation steps

1.
Heat the oil in a frying pan and cook the onions and chilli until soft but not browned. Add the tomatoes, sugar and Tabasco sauce and bring to a boil. Reduce the heat and simmer until thickened. Season to taste with sea salt and lemon juice. Set aside to cool.

Mix the crayfish with the tomato mixture.

Split open the bread rolls and place a piece of lettuce on the bases. Top with a slice of tomato. Spoon the crayfish and tomato mixture on top, then sprinkle with cracked black pepper. Add the bread roll tops and secure with cocktail sticks. Garnish the serving plate with a sprinkling of sea salt.
