- 1 John Dory fillet (1.5 kg, ready to cook)
- 1 Fennel bulb
- salt
- freshly ground peppers
- 1 garlic clove
- 2 Tbsps black Olives (pitted)
- 50 grams Pine nuts
- 50 grams softened butter
- 100 grams Cherry tomatoes
Preparation steps

Preheat the oven to 180 ° C upper and lower heat.

Rinse fish and pat dry. Score skin on each side 5-6 times.

Rinse and dry fennel, cut into small pieces. Set aside green parts for garnishing.

Season fish inside with salt and pepper. Fill with some fennel. Peel garlic and chop finely. Chop olives and pine nuts finely. Combine with butter and season mixture with salt and pepper. Rub fish with the mixture inside and out. Place remaining fennel on a baking sheet and top with fish. Arrange rinsed tomatoes around fish and bake in preheated oven at 180°C (approximately 350°F) for about 35 minutes or until golden brown.
