- 1 head Cauliflower
- 16 ozs sliced Bacon (cooked and crumbled)
- 2 cups hard-boiled eggs (diced)
- 1 cup sharp Cheddar cheese (cubed)
- 2 scallions (cleaned and chopped)
- 1 cup Mayonnaise
- 2 tsps granulated sugar
- 2 tsps White vinegar
- 1 handful fresh cilantro (chopped)

Preparation steps
1.
In a large bowl, combine cauliflower, bacon, eggs, cheese, and spring onions.

In a small bowl, combine mayonnaise, sugar and vinegar. Taste to test, adding more sugar or vinegar if needed. Spoon dressing over cauliflower mixture and toss to thoroughly coat.
3.
Cover and refrigerate for at least 4 hours before serving. Garnish with chopped cilantro just prior to serving.
