- 1 carrot
- 2 scallions
- 2 Tbsps finely chopped parsley
- 1 Tbsp olive oil
- salt
- freshly ground peppers
- ½ tsp Curry powder
- 8 slices Whole Grain Toast
- 8 Tbsps Cottage cheese
- 4 leaves Iceberg lettuce
- 4 Tbsps Yogurt (0.1% fat)
- 2 Tbsps grated Gouda

Preparation steps
1.
Peel carrot and finely grate. Rinse scallions, trim and cut into thin strips.

Heat olive oil in a pan and sauté carrots and scallions over medium heat while stirring frequently and season with salt, pepper and curry powder. Reduce heat, simmer over low heat for 1 minute, then stir in parsley and leave to cool.
3.
Toast slices of bread, spread with cottage cheese and top with lettuce leaves. Mix carrots, scallions and parsley in a bowl with yogurt and gouda. Spread carrot mixture on 4 bread slices, cover with lettuce leaves and cover with remaining bread slices. Press gently and cut in half diagonally. Serve immediately.
