1 pumpkin seed roll
Vegetables (as desired, such as zucchini, eggplant, bell peppers, alternatively grilled or pickled vegetables from a jar)
1 slice Mozzarella
1 tsp lemon juice
olive oil
salt
freshly ground peppers
1 Artichoke hearts (from a jar)
Mayonnaise

Preparation steps

Prepare vegetables of your choice, cut into slices or strips as needed. Cook vegetables under a preheated oven broiler, watching carefully. Brush with a little oil and cook on both sides. Allow vegetables to cool and season with salt, pepper and lemon juice.

Cut roll in half horizontally, spread with a little mayonnaise, cover lower half with cooked vegetables and mozzarella. Drain artichoke hearts, cut into strips, place on vegetables and cover with top half of roll. Serve immediately.
