2 ½ kilograms Red Currants
2 ½ liters water
1 ¼ kilograms sugar
2 grams Nutritional yeast
1 gram Pure yeast (dry)
5 milliliters Anti gelling agents

Preparation steps

1.

Rinse the red currants, remove from the stalks and crush with the fermentation tank.

2.

Dissolve the sugar in water and pour into the mash. Add the nutritional seasoning, the yeast and the antigelling agent. Mix well.

Cover the vat with a towel and let ferment for one week. Stir vigorously once a day.

3.

After 1 week, squeeze the mash to remove the wine. Pour the wine in a carboy, leaving 1/10 empty. Allow to ferment in a dark place at about 17°C (approximately 63°F). Bottle at about 3 months. Allow to ferment another 5 to 6 months.
