- 500 grams Pastry flour
- 1 pkg Baking powder
- 4 eggs
- 500 grams Yogurt (0.1% fat)
- 100 grams Sour cream
- 200 grams sugar
- 4 drops vanilla extract
- 160 milliliters vegetable oil
- 500 grams Apricot
Preparation steps

1. Grease the muffin tin with butter or line with paper cups.

2. Mix the flour and baking powder. Cut the drained apricots into cubes and stir into the flour mixture.

3. Mix the yogurt, sour cream, eggs, vanilla and sugar.

Stir in the oil. Loosely fold in the flour mixture until the ingredients are just combined.

4. Pour the batter into the muffin tin. Bake for 25-30 minutes at 160°C (approximately 325°F). Remove from the oven and let cool for about 10 minutes. Remove the cupcakes from the pan, cool on a wire rack and serve.
