- 1 red Bell pepper
- 6 Radish
- 1 handful Dill
- 3 ozs reduced fat cream cheese
- 3 Tbsps Whipped cream
- salt
- peppers
- 1 large Cucumber

Preparation steps

Rinse the bell peppers, cut in half, remove seeds and white ribs, and finely dice. Rinse and trim the radishes. Thinly slice a quarter of the radishes. Coarsly grate the remaining radishes. Rinse the dill, shake dry and finely chop.

In a bowl, stir the bell pepper with the grated radishes, dill, cream cheese, and heavy cream. Season with salt and pepper to taste.

Rinse the cucumber and peel strips lengthwise along the cucumber. Cut into 3/4-1 inch pieces. Use a small spoon or melon baller to hollow out the cucumbers. Fill with the cream cheese mixture and garnish with the radish slices.
