- 20 large Prawn (shelled, tail on)
- 1 cup Coconut flour
- 1 tsp Sea salt
- 1 tsp paprika
- 3 egg whites (lightly beaten)
- 2 ½ cups Shredded coconut
- Lime wedge (to serve)
Preparation steps

Heat the oven to 200ºC (180º fan) | 400ºF | gas 6. Grease a baking sheet with a little oil.

Wash the prawns and pat dry with kitchen paper. Season the coconut flour with the sea salt and paprika and place in a flat dish.
3.
Dredge the prawns through the seasoned flour, shake off any excess then dip into the egg whites and then into the desiccated coconut, ensuring each prawn is well-coated.
4.
Place the prawns on the baking sheet and bake in the oven for 15-20 minutes, turning once. Serve with the lime wedges alongside.
