- 300 grams Chestnut mushroom
- 1 shallot
- 1 garlic clove
- 1 Tbsp Canola oil
- 8 slices Bacon (sliced)
- ½ tsp dried thyme
- salt
- freshly ground peppers
- 2 Tbsps scallions
- 4 lg slices white bread
- 4 slices Hard cheese
Preparation steps

Clean mushrooms and cut into small pieces. Peel shallot and garlic and chop finely. Heat 1 tablespoon of oil in a pan and cook bacon until crispy. Remove bacon from pan. Heat remaining oil in a pan. Saute shallots and garlic until soft. Add mushrooms and saute for 5-8 minutes. Season with thyme, salt, pepper. Sprinkle with chives.

Preheat the oven to the grill preheat.

Cut bread slices in half and toast under a broiler until golden brown on both sides, watching carefully. Remove from oven and top with mushroom mixture. Top with a slice of cheese and bacon. Return to oven and toast until cheese has melted, watching carefully. Serve immediately.
