- 10 slices Prosciutto
- freshly ground peppers
- 24 Pieces (green asparagus)
- 200 grams Spinach (fresh)
- Parmesan
- For the dressing
- 4 Tbsps balsamic vinegar
- 8 Tbsps olive oil
- salt
- freshly ground peppers

Preparation steps
1.
Heat pan and cook proscuitto slices until crispy.
2.
Peel lower thirds of asparagus stalks and trim woody ends.
3.
Cook asparagus in boiling salted water for about 8-12 minutes or unil al dente. Drain well.
4.
Rinse and spin dry spinach.
5.
Whisk vinegar with oil, season with salt and pepper.
6.
Arrange asparagus, spinach and prosciutto on plates and drizzle with the dressing.
7.
Grate Parmesan and sprinkle on top. Serve.
