Preparation steps

Rinse the asparagus, remove the woody stems and cook in plenty of salted water with butter and lemon juice about 8-12 minutes. Cook until al dente. Meanwhile, cut the goat cheese into cubes about 1.5-2 cm (approximately 1/2-3/4 inch) and coat with flour. Whisk the eggs in a bowl and add the cheese cubes. Roll the cubes in breadcrumbs. If too little breading is on a cube, dip it into the egg mixture again and again into the breadcrumbs.

Cook the cubes in hot oil in the deep fryer at 180°C (approximately 350°F) for about 1-2 minutes until golden. Drain on paper towels. Arrange the cooked asparagus on plates, drizzle some herb butter and add the cheese cubes to serve immediately.
