1 Tbsp butter
1 Tbsp sugar
breadcrumbs (for breading)
2 beaten eggs
Pastry flour (for dredging)

2 Tbsps lemon juice
1 Tbsp butter

parsley (for serving)

Preparation steps

Peel asparagus and place in a pot of boiling salted water with sugar, lemon juice and 1 tablespoon butter. Cover and simmer over low heat until al dente, about 10 minutes. Drain, rinse with cold water and let cool. Pat asparagus dry, dredge in flour and dip in beaten eggs. Coat on all sides with breadcrumbs and press firmly to help breading adhere. In a pan, fry asparagus in plenty of hot butter until golden-brown. Drain on paper towels. Place several asparagus spears in a bundle and tie with a chive stem. Sprinkle decoratively with parsley leaves.

Serve with a tomato and herb salsa, if desired.
