150 grams Wild strawberry
1 egg
1 egg yolk
½ Vanilla bean (seeded)
40 grams powdered sugar
100 grams softened cream cheese
100 milliliters Whipped cream
1 tsp lemon juice

Preparation steps

Mash about half of the berries with a fork. Separate the eggs and place the egg whites in the refrigerator. Whisk the yolks with the vanilla bean seeds and powdered sugar in a double boiler or heatproof bowl over a saucepan of simmering water until thick and creamy. Remove from heat and place over a bowl of ice to cool quickly.  Mix together the mashed strawberries and cream cheese and fold into the cooled egg yolk mixture. Beat the egg whites with the lemon juice until stiff and fold into the strawberry mixture. Line 4 large ramekins with plastic wrap and evenly divide the mixture between the ramekins. Distribute the remaining berries into the ramekins and freeze for at least 5 hours.

Remove the parfaits from the freezer about 5 minutes before serving. Turn out onto a plate, remove the plastic wrap and serve.
