- 14 clear Gelatin sheet
- 200 milliliters clear Apple juice
- 3 Limes
- 500 grams Strawberries
- 500 grams Quark
- 150 grams Yogurt
- 125 grams sugar
- 200 grams Whipped cream
Preparation steps
Freeze a 1.25 liter (approximately 5 cup) bowl. Soak gelatin in cold water for 5 minutes. Dissolve 4 sheets in hot apple juice. Let cool, then add to frozen bowl and chill. Repeat 4-5 times.
Zest and juice 2 limes. Thinly slice remaining lime and set aside. Rinse strawberries, set aside 3-4, core and chop the rest.
Combine quark, yogurt, lime juice and zest, sugar and crushed strawberries. Dissolve remaining gelatin into mixture. Chill until mixture starts to gel.
Beat cream until stiff and fold into quark mixture. Pour half the quark cream into the bowl, then add lime slices around the edge and add remaining quark cream. Chill for at least 4 hours.
Dip bowl in hot water and flip gelatin onto a plate. Serve garnished with remaining strawberries.
