- 3 organic Limes
- 2 bunches Peppermint
- 1 l Fruit juice (such as apple, pear, white grape)
- 60 grams honey
- 12 sheets white gelatin
- mint (for garnish)

Preparation steps
1.
Rinse limes and pat dry. Cut 1 lime into thin slices and set aside for garnish. From the remaining limes, remove zest and squeeze juice. Rinse mint and add to a pot with lime juice and zest. Add fruit juice and bring to a boil. Cover, remove from heat and let soak about 2 hours.

Soften gelatin in cold water.

Pour juice mixture through a sieve. Add honey to the liquid and warm slightly. Squeeze gelatin sheets and dissolve gelatin into the liquid by stirring. Divide mixture among 4 serving dishes and allow to set in the refrigerator for 3 hours.
4.
To serve, top with the remaining slices of lime and garnish with mint leaves.
