0.333 cup brown sugar
3 cups skim milk
2 bay leaves
4 stalks Rhubarb (washed and chopped)
2 Pear (peeled, cored and chopped)
½ cup Orange juice
2 Tbsps honey
2 Limes (zested)

1 Bowl, 1 Cutting board, 1 Large knife, 1 Serrated knife, 1 Tablespoon, 1 Whisk, 1 Grilling tongs, 1 Grill, 1 Citrus juicer, 1 Small knife

Preparation steps

Heat the oven to 150ºC (130º fan) 300ºF, gas mark 2.

Rince the rice in a sieve held under running water then place it in an ovenproof dish. Add the sugar, milk and bay leaves, stir well then cover and place in the oven for about 2 hours.

Meanwhile, place the rhubarb, pears, orange juice and honey in a pan and cook very gently for about 15 minutes or until the pears and rhubarb are tender.
4.
Place a little rice pudding in the bottom of serving dishes, top with the rhubarb mixture and garnish with the lime zest.
