- ⅔ cup Rice pudding
- 0.333 cup brown sugar
- 3 cups skim milk
- 2 bay leaves
- 4 stalks Rhubarb (washed and chopped)
- 2 Pear (peeled, cored and chopped)
- ½ cup Orange juice
- 2 Tbsps honey
- 2 Limes (zested)

Preparation steps

Heat the oven to 150ºC (130º fan) 300ºF, gas mark 2.

Rince the rice in a sieve held under running water then place it in an ovenproof dish. Add the sugar, milk and bay leaves, stir well then cover and place in the oven for about 2 hours.

Meanwhile, place the rhubarb, pears, orange juice and honey in a pan and cook very gently for about 15 minutes or until the pears and rhubarb are tender.

Place a little rice pudding in the bottom of serving dishes, top with the rhubarb mixture and garnish with the lime zest.
