- 600 grams Crookneck pumpkin (peeled and seeded)
- 200 milliliters Coconut milk
- 1 l Chicken broth
- 2 shallots
- 1 tsp ginger (freshly grated)
- 1 Lemongrass (chopped)
- 2 Tbsps vegetable oil
- Sambal oelek
- Sea salt
- 2 Tbsps Chives (with flowers)

Preparation steps
1.
Coarsely dice pumpkin. Peel shallots and finely dice. Sauté both in a saucepan with hot oil. Add ginger and lemongrass and sauté briefly. Deglaze with the broth. Add coconut milk and simmer over low heat until tender, about 20 minutes. Puree and season with salt and sambal oelek.
2.
Ladle into bowls and serve sprinkled with chives.
