1 Tbsp butter
1 Red onion (peeled and finely chopped)
2 ripe Tomatoes (chopped)
1 sprig thyme
2 cups canned cannellini beans (or flageolet beans, drained)
1 cup Oat cream or double (heavy) cream
salt

Preparation steps

1.
Cook the linguine in boiling salted water according to packet instructions.
2.
Heat the butter in a pan and sweat the onion without colouring until tender.
3.
Add the tomatoes, beans and thyme and heat through.
4.
Drain the pasta, retaining a little of the cooking water, then set aside.
5.
Add the cream to the sauce with a little pasta water to lubricate, then season. Tip in the linguine and toss until coated, then serve.
