16 ozs Fettuccine
1 Tbsp good-quality olive oil
1 Tbsp butter
1 onion (peeled and diced)
2 cloves garlic cloves (peeled and minced)
0.333 cup Prosciutto (chopped)
¼ cup dry white wine
1 ½ cups heavy cream
1 cup frozen green pea
salt (to taste)
freshly ground Black pepper (to taste)
¾ cup Parmesan (grated)

Preparation steps

Cook pasta in a pot of boiling water according to package instructions until al dente.

Meanwhile, melt the oil and butter in a large saute pan set over medium-high heat. Add the onions and cook for 3 to 4 minutes, or until translucent. Add the garlic and cook until fragrant, about 30 seconds. Add the chopped prosciutto and cook for 1 to 2 minutes.

Deglaze the pan with the white wine and cook until liquid evaporates, about 1 minute. Add the cream and peas, season to taste with salt and pepper. Gently cook until the cream is reduced by half, about 4 to 5 minutes.

Drain the pasta well and transfer to a large serving bowl. Pour the sauce over the pasta and and sprinkle with Parmesan cheese. Use tongs to stir the pasta. Divide between plates and serve hot.
