250 grams Jerusalem artichoke
100 grams Celery root
1 onion
1 garlic clove
2 Tbsps butter
100 milliliters Whipped cream
2 Tbsps Crème fraiche
salt

80 grams Pancetta (in slices)
150 grams Porcini mushroom

Preparation steps

1.

Peel and dice Jerusalem artichoke, celery, onion and garlic. Sauté prepared vegetables in melted butter until translucent, 2-3 minutes. Deglaze with broth and simmer over low heat, about 25 minutes. Puree soup, strain through a sieve into another pot and heat until warmed through. Simmer soup a few minutes more or add additional broth until soup is desired consistency. Stir in cream and creme fraiche. Season with salt and pepper.

Fry bacon in a pan until crispy, 2-3 minutes per side. Drain on paper towels. Wipe mushrooms clean with a paper towel and cut into slices. Fry mushrooms in bacon fat until golden-brown. Season with salt and pepper.

Ladle soup in bowls and garnish with mushrooms and bacon.

Serve with Jerusalem artichoke chips, if desired.
