100 grams butter
1 onion
1 garlic clove
2 starchy potatoes
100 grams mixed Fresh herbs (Parsley, basil, lemon balm, arugula)
150 grams Crème fraiche
1 l Vegetable broth
freshly ground peppers
100 milliliters Whipped cream

Preparation steps

1.

Peel and chop onion and garlic. Chop herbs. Peel and dice potatoes. Heat butter in a saucepan and saute onion and garlic until translucent. Add herbs and potatoes and saute for about 5 minutes on low heat.

Add vegetable stock and simmer for 15 minutes. Puree with an immersion blender to a creamy soup. Add creme fraiche and season with pepper well. Whip cream. Pour soup into bowls and serve garnished with spoonfuls of cream.
