- 150 grams starchy potatoes
- 150 grams Celery root
- 1 shallot
- 1 garlic clove
- 1 Tbsp vegetable oil
- 1 Tbsp Pastry flour
- 100 milliliters dry white wine
- 2 handfuls freshly chopped Fresh herbs (such as cress, sorrel, burnet, chives, dill)
- 100 milliliters Whipped cream
- 50 grams Crème fraiche
- salt
- Nutmeg (freshly grated)

Preparation steps
1.
Peel and coarsely chop the potatoes and celery. Peel and finely chop the shallot and garlic. Add the potatoes and celery, then sprinkle with flour. Gradually incorporate the broth and simmer gently for 15 minutes.

Rinse and dry the herbs. Remove the leaves and finely chop.
3.
Add the cream to the soup, then puree. If the soup is too thick, add a little broth. if the soup is too thin, simmer until thickened. Mix in the creme fraiche and herbs. Stir until combined, then season to taste with salt, nutmeg, and pepper.
4.
Divide into bowls, garnish with fresh herbs, and serve.
