Ingredients

For the pastry
250 grams Pastry flour
125 grams cold butter
1 pinch salt
1 egg
For the topping
1 garlic clove
200 grams cooked ham
2 Tbsps chopped parsley
500 grams Quark
100 grams Whipped cream
3 Tbsps Mustard
4 eggs
salt
freshly ground peppers
cayenne pepper
3 Tbsps lemon juice

Preparation steps

1.

For the pastry: Pile flour on the work surface, mix with salt and make a well in the center. Cut cold butter into small pieces and arrange around the well. Add an egg to the well and chop all ingredients with a knife until crumbly.

Quickly knead into a smooth pastry and shape into a ball. Wrap in plastic wrap and refrigerate for 30 minutes.

For the topping: Peel garlic and chop finely.

Roll out pastry on a floured surface thinly and line tart pan with it, making an edge all around. Refrigerate for 30 minutes.

Cut ham into thin strips.

6.

Whisk quark with cream, mustard and egg and season well with salt, pepper, cayenne pepper and lemon juice. Add ham, garlic and parsley and mix well. Spread creamy mixture onto pastry and bake in preheated oven at 200°C (approximately 400°F) for about 35 minutes or until golden brown. Remove from the oven and serve warm or cold.
