- 4 scallions
- 2 Tbsps Oil
- 1 Tbsp butter
- 1 clove garlic cloves (chopped)
- 3 cups frozen peas
- 2 ½ cups chicken stock
- ⅞ cup cream (30% fat)
- 2 Tbsps Crème fraiche

Preparation steps
1.
Finely slice the spring onions, keeping the white and green parts separate.
2.
Heat the oil and butter in a pan and gently cook the white parts of the spring onions until soft but not brown. Add the garlic, cook for 1 minute then add the peas and the stock.
3.
Bring to a boil, season with salt and pepper and simmer for 10 minutes. Blend quickly with a hand blender then add the cream and the green parts of the spring onions.
4.
Reheat very gently and serve with a swirl of the creme fraiche.
