Preparation steps

1.
Grease a 30 cm|12" x 15 cm|6" x 5 cm|2" freezable ceramic dish with non-stick cooking spray.

Beat the eggs yolks in a mixing bowl with an electric whisk for 2 minutes until pale and thick. In a small, microwave-safe bowl, stir the honey into 1 1/2 teaspoons of water until dissolved. Microwave at high power until very hot, about 45 seconds.

Slowly pour the hot honey into the yolks and beat on high until pale and fluffy, about 8 minutes.

Meanwhile, in a small saucepan, combine the sugar with 75 ml of water and bring to a simmer, stirring until the sugar dissolves. Brush down the sides of the pan with a wet pastry brush.

Simmer over moderately high heat, undisturbed, until the syrup registers 116°C|240F on a sugar thermometer.

Carefully pour the hot sugar syrup down the side of the bowl into the yolks and beat at high speed until very pale and thick, about 5 minutes.
7.
In a separate mixing bowl, whip together the cream and vanilla extract until softly peaked. Gently fold the whipped cream, in three batches, into the sugar and egg yolk mixture. Spoon into the prepared dish and stud with strawberries and pistachios.
8.
Cover with clingfilm and freeze for 4 hours. Remove from the freezer once set, and serve with lemon zest and a drizzle of strawberry sauce on top.
