- 4 Eggshells (Blown eggs)
- egg yolks (6 hard-boiled eggs)
- 150 grams Crème fraiche
- salt
- 1 tsp Tomato paste
- 1 tsp Ketchup
- 4 Edible flowers

Preparation steps
1.
Gently cut a lid from eggshells. Briefly place in boiling water and then dry on a paper towel. Mash egg yolks and mix with creme fraiche, tomato paste and ketchup. Season with salt and puree with 1 tablespoon of water using an immersion blender.

Use a piping bag to fill eggshells with egg yolk mixture. Serve on a bed of cress garnished with edible flowers.
