- For the beef fillet
- 18 ozs Beef fillet
- 1 Tbsp Melange Noir (pepper mix) or black pepper
- Sea salt
- 2 Tbsps ramp oil
- For the polenta
- 3 cups vegetable stock
- 1 ½ cups Polenta
- ½ cup grated Parmesan
- 2 Tbsps butter
- parsley (to garnish)

Preparation steps
1.
Bring the stock to the boil. Pour the polenta into the boiling liquid and stir well.
2.
Simmer, stirring constantly, for about 35 minutes, until the polenta has absorbed the liquid. Remove the pan from the heat and stir in the grated Parmesan and butter.
3.
For the meat, cut the beef fillet into 4 portions. Dry each piece, season with melange noir and brush with oil.
4.
Put on the barbecue and quickly grill on all sides until nicely browned. Then season with salt and cut each portion into bite-sized pieces. Serve on plates with the polenta. Garnish with parsley leaves.
