- 18 ozs Sirloin steak
- ⅛ cup butter
- 2 shallots (diced)
- 1 ⅓ cups white wine
- 1 cup cream (48% fat)
- 1 Tbsp Dijon mustard
- 2 tsps lemon juice
- salt
- peppers
- 4 cups shredded salad

Preparation steps
1.
Heat the oil in a large deep frying pan and cook the steak for about 4 minutes on each side for medium rare and about 6 minutes on each side for medium-well done. Remove from the pan, cover and leave to rest.
2.
Melt the butter in a pan and gently cook the shallots for a few minutes until soft but not coloured.
3.
Add the wine, bring to a boil and boil rapidly for about 10 minutes until the liquid is reduced by half.
4.
Add the cream and mustard and heat through thoroughly. Stir in the lemon juice and season to taste with salt and pepper.
5.
Return the frying pan to the heat and sitr in the greens. Cook for 1-2 minutes until just wilted. Season to taste with salt and pepper.
6.
Cut the steak into cubes and toss with the greens. Stir in the cream sauce. Serve with boiled rice.
