- 2 cups gluten-free all purpose flour
- 1 pinch salt
- ¼ tsp xanthan gum
- ½ cup butter
- ¼ cup caster sugar
- 1 egg yolk (beaten)
- 2 Tbsps water (more if needed)
- 1 ⅓ cups cream (48% fat)
- 2 Tbsps powdered sugar
- ½ tsp Almond extract
- 1 ⅓ cups ripe Cherries (pitted and roughly chopped)
- To decorate
- 6 Cherries

Preparation steps
1.
Sift the flour, salt and xanthan gum into a ming bowl. rub in the butter until the mixture resembles breadcrumbs.
2.
Stir in the sugar and egg yolk. Gradually add enough water to form a dough. Wrap in cling film and chill for about 15 minutes.
3.
Heat the oven to 200°C (180° fan) 400°F gas 6. Grease 6-8 individual tart tins

Separate the dough into 6 - 8 portions. Press into the tart tins, trimming excess dough around the edges. Prick the bases with a fork.
5.
Bake for 10-15 minutes until golden and cooked through.
6.
Whisk together the cream, icing sugar and almond extract until thick. Gently stir in the cherries and divide between the pastry cases.
7.
Place a cherry on each tart.
