Creamy Celery Soup with Crayfish Tails

The celeriac contained in the soup drains the body in a tasty and gentle way and at the same time provides healthy minerals, vitamins and essential oils. Dill also contains essential oils - these have a relaxing and soothing effect on the stomach.
The addition of white wine is not absolutely necessary with this soup. So if you would like to do without the wine, whose alcohol is overcooked, you can compensate for the amount of liquid by adding more vegetable stock.

- 200 grams floury potatoes
- 400 grams Celery root
- vegetable oil
- 100 milliliters dry white wine
- 800 milliliters Vegetable broth
- salt
- freshly ground peppers
- 100 milliliters Whipped cream
- freshly grated Nutmeg
- 150 grams crayfish (cooked, peeled)
- 300 milliliters fish stock
- 2 Tbsps freshly chopped Dill
Preparation steps
Peel onion and chop finely. Peel celery and potatoes and cut into small cubes. Heat 2 tablespoons of oil in a saucepan, saute onion until translucent. Add vegetables and saute for a few minutes. Add wine and broth. Season with salt and pepper, simmer for about 15 minutes on medium heat. Remove 1/3 of vegetables and puree remaining soup. Add cream, return vegetables and bring to a boil. Season with salt, pepper and a pinch of nutmeg.
Warm crayfish tails in warm fish broth.
Pour soup into soup bowls, top with crayfish tails and sprinkle with dill. Serve.
