- 28 ozs small, red-skinned new Potato
- 4 Tbsps white wine vinegar
- 1 Red onion (finely chopped)
- 4 hard-boiled eggs (chopped)
- 6 scallions (finely sliced)
- 1 stalk Celery (finely sliced)
- 8 Cornichons (chopped)
- 4 Tbsps chopped parsley
- ½ cup Sour cream

Preparation steps
1.
Cook the potatoes in a large pan of boiling, salted water until tender then drain well and let cool a little.
2.
Cut the potatoes in half, place them in a large bowl and drizzle over the vinegar.
3.
When the potatoes are cool, gently mix in the red onion, eggs, spring onions, celery, cornichons and parsley and season with salt and pepper.
4.
Drizzle over the sour cream and serve.
