600 grams fully ripe Tomatoes
1 Tbsp Vegetable broth (Instant)
1 shallot
1 Tbsp butter
Basil
salt
freshly ground peppers
200 grams Whipped cream

Preparation steps

1.

Blanch tomatoes, peel and chop.

Peel shallots, chop finely and sauté in butter until translucent. Add tomatoes and cook briefly. Add water and broth, cover and simmer about 20 minutes. Then puree and season with salt and pepper.

3.

Whip cream until stiff and stir 2/3 of the cream into the tomato soup. Ladle soup into bowls and top each serving with a dollop of cream. Garnish with basil leaves and serve with toasted baguette slices, if desired.
