1 carrot
100 grams Celery
1 shallot
1 garlic clove
1 Tbsp olive oil
100 grams diced Smoked bacon
1 Tbsp vegetable oil
1 Tbsp Italian Fresh herbs (dried)
1 can diced Tomatoes
400 milliliters Vegetable broth
1 Tbsp Crème fraiche
4 Tbsps scallions
50 milliliters Whipped cream
salt
freshly ground peppers

Preparation steps

Peel the carrot, celery, shallot and garlic and chop finely. Sauté the bacon in hot olive oil. Add the diced vegetables and herbs and sauté. Add the tomatoes and broth into it and simmer over low heat for about 20 minutes. Puree (with a little broth, if needed), stir in the creme fraiche and season with salt and pepper.

Fill into bowls. Serve with a dollop of whipped cream, garnished with chopped chives.
