200 grams Goat cheese
2 tsps freshly chopped oregano
1 Tbsp olive oil

1 bunch Arugula (150 grams) (approximately 2/3 cup)
250 grams Strawberries
1 shallot
1 tsp butter
2 Tbsps balsamic vinegar
½ tsp Mustard
4 Tbsps olive oil

Preparation steps

1.

Roast the pine nuts in a dry frying pan. Mix the fresh goat cheese with oregano, half the pine nuts, olive oil and pepper well.

Rinse arugula, spin dry, remove tough stems, and pluck the leaves.

Rinse, trim and cut the strawberries into eighths.

4.

Peel the shallot, cut into very small cubes and sweat glazed in butter in a pan. Whisk the vinegar, mustard, salt and pepper, and olive oil. Stir in shallots and season.

5.

To serve, arrange the arugula and strawberries on plates. Place 2 tablespoons of the cream cheese on the salad. Drizzle the salad with salad dressing and sprinkle remaining pine nuts over the top.
