- 125 grams Couscous
- 125 grams Thai asparagus (or thin green asparagus)
- 1 scallion
- salt
- freshly ground peppers
- Chervil (1 tablespoon, finely chopped)
- scallions (1 tablespoon, finely chopped)
- 2 Tbsps sunflower oil
- 2 Tbsps White vinegar
- 1 tsp grated Lime zest
- 2 Tbsps Orange juice
- 4 Tbsps Lime juice
- sugar
- Lime zest (for garnishing)

Preparation steps

Cook couscous according to package instructions.

Rinse asparagus and scallion, cut scallion into thin rings. Cut off asparagus ends. Blanch asparagus in boiling salted water for about 3 minutes. Drain and rinse in cold water, drain again.

Combine chervil, chives and scallion with oil, vinegar, lime zest, 1 tablespoon of orange and 2 tablespoons of lime juice, season with salt, pepper and sugar. Mix with couscous and sprinkle with parsley and lime zest. Drizzle asparagus wtih remaining citrus juice and place on top of couscous. Serve.
