- 1 fresh chicken ready to cook (1.2 kg)
- salt
- freshly ground peppers
- 125 grams marbled Smoked bacon
- 150 grams button Mushroom
- 500 grams small potatoes
- 4 ripe Beefsteak tomato
- 1 Tbsp olive oil
- 250 grams green, pitted Olives
- 2 centiliters Cognac
- 100 milliliters chicken stock

Preparation steps

Rinse and pat dry chicken, season with salt and pepper.

Cut bacon into small cubes. Clean mushrooms, halve or quarter larger mushrooms, leave small mushrooms whole. Peel potatoes, rinse and halve. Rinse tomatoes and carve crosswise at the bottom. Blanch in hot water, rinse in cold water and peel, quarter and remove seeds.

Heat olive oil in an ovenproof dish and cook bacon briefly. Add chicken and brown on all sides. Add potatoes, mushrooms, olives and tomatoes and cook for 5 minutes, stirring occasionally.

Add cognac and chicken stock. Cover dish and bake in preheated oven at 200°C (approximately 400°F) for about 50-60 minutes. Season to taste and serve hot.
