Preparation steps
1.
Cut corned beef into slices, about 0.7 cm or 1/4-inch-thick. Drain pickles and cut lengthwise into thin slices. Rinse watercress, trim and spin dry. Peel and coarsely grate beet. Mix mayonnaise with mustard. Preheat the broiler. Toast the bread, watching carefully. Spread half the bread slices with mayonnaise-mustard mixture and season with cayenne pepper.
2.
Arrange the beet and pickle on top of the bread slices, then layer with 1-2 slices corned beef and a slice of cheese. Return to broiler and cook, watching carefully until cheese has melted. Top with watercress and cover with remaining bread slices. Stick in wooden skewers before serving.
