- 500 grams potatoes
- 1 onion
- 10 grams butter
- 0.13 l milk
- 0.13 l Broth
- 350 grams Corned Beef
- 10 grams Margarine
- 4 eggs
- peppers (from the mill)
- Sea salt
- 4 Pickled cucumbers (sliced)
- 4 Cherry tomatoes (sliced)
- 1 Tbsp scallions

Preparation steps
1.
Peel and chop potatoes and boil in salted water.
2.
Peel onion and cut into small cubes. Sauté onion in butter.
3.
Heat milk and broth. Drain potatoes, add milk and broth and mash with a potato masher. Add more broth if necessary. Stir onion into mashed potatoes.
4.
Mash corned beef with a fork and fold into potatoes.
5.
In a nonstick pan, melt margarine and fry eggs. Season eggs with salt and pepper. Divide corned beef mixture among four plates and top each serving with a fried egg. Garnish with pickle and tomato slices. Serve sprinkled with chives.
