Ingredients

- 100 grams Milk chocolate
- 1 tsp Coconut oil
- 60 grams Shredded coconut
- For the muffins
- 100 grams sugar
- 2 Tbsps Coconut syrup
- ½ whole lemon (zested and juices)
- 2 eggs
- 175 grams Pastry flour
- 75 grams Shredded coconut
- 1 tsp Baking powder
- 50 grams cornstarch
- 150 grams Yogurt (0.1% fat)
- 12 Chocolate cookie cookies (such as Oreos)
Preparation steps
Preheat the oven to 180°C (approximately 350°F). Grease the wells of a muffin tin and dust with flour.
Beat the butter with the sugar, coconut syrup, lemon zest and juice until frothy, then gradually add the eggs and beat until smooth and creamy. Mix the flour with the grated coconut, baking powder and cornstarch and stir into the egg mixture alternately with the yogurt. The batter will be thick.
Fill the wells of the muffin tin halfway with the batter, top with a cookie, then the remaining batter. Bake for 20-25 minutes, until golden brown. Remove from the oven and allow to cool slightly before removing from the muffin tin. Cool completely on a wire rack.
To decorate: Chop the chocolate and melt with the coconut oil over a hot water bath. Spread the chocolate over the muffins and sprinkle with shredded coconut.
