Colourful Pasta Salad with Beef

- 400 grams Rigatoni
- 2 red Bell pepper
- 200 grams Baby corn cob
- 8 thinly sliced Ciabatta
- 500 grams Steak (hip or loin)
- 2 Red onions
- ½ bunch parsley
- salt
- freshly ground peppers
- 3 Tbsps White balsamic vinegar
- olive oil
- Sour cream
Preparation steps
Cook the pasta according to package instructions in salted water until al dente. Rinse and drain.
Rinse the bell peppers, cut in half, trim and cut into wide strips.
Rinse the baby corn and cut into 2 cm long pieces (approximately 3/4 inch).
Peel the onions and cut into wedges.
Rinse the parsley, shake dry, pluck the leaves and chop them coarsely.
Fry the ciabatta on both sides in some oil, until golden brown. Drain on paper towels.
Rinse the steak, pat dry and cut into four slices. Fry in some olive oil on each side for 1-2 minutes. Season with salt and pepper, remove from the pan and leave to rest briefly.
Cook the bell peppers, onions and baby corn in a grill pan with a little oil for 2-3 minutes. Season with salt and pepper.
Mix the vegetables with the pasta, 3 tablespoons of olive oil, the balsamic vinegar and the parsley. Season again with salt and pepper and transfer to plates. Lay the ciabatta on the vegetables and arrange the thinly sliced steak on top.
Serve with a little sour cream.
