1 Kiwi
1 Apple
50 grams Currants
1 Orange
100 grams small Greengage
30 milliliters lemon juice
1 honey
15 milliliters white Rum

Preparation steps

Rinse fruit thoroughly. With a sharp knife, cut a zig-zag line around the upper third of the melon, so the two melon pieces with zig-zag border result.

With a melon baller, remove most of the flesh from the from the larger of the two parts, leaving a 2 cm (approximately 3/4 inch) thick layer of pulp. Remove all the flesh from the smaller third of the melon. Peel the orange with a sharp knife, removing all the membranes and fillet the orange sections. Rinse the apple, cut into quarters, remove the coresand cut into slices. Peel the kiwi and cut into slices. Leave the currants attached to their branch to use as garnish.

Remove the pits from some greengage plums and leave a few intact with their stems for garnish. Mix the remaining fruit together and spoon into the larger melon bowl. Garnish with remaining Greengages, currant branch and fruit slices. Mix the lemon juice, honey and rum into a sauce and pour over the fruit. Chill stuffed melon for one hour in refrigerator and serve.
