- For the salad
- 250 grams Broad bean
- ½ onion
- olive oil (for sautéing)
- 100 milliliters Vegetable broth
- 500 grams mixed Tomatoes (such as orange, red and yellow)
- ½ Daikon radish
- For the marinade
- 2 Tbsps mild Vinegar (such as herb vinegar)
- 2 Tbsps olive oil
- 1 Tbsp warm water
- 1 tsp Lemon oil (to taste)
- 1 finely chopped garlic clove
- ½ tsp salt
- 2 pinches sugar
- 2 sprigs chopped parsley
- parsley (for garnish)

Preparation steps

For the salad, peel the outer layer from broad beans and remove bean seeds. In a saucepan, heat the oil. Peel the onion, chop finely and sauté about 2 minutes in oil. Stir in the broad bean seeds and add the broth. Cover and cook for 10-15 minutes on low heat, then remove lid and cook until liquid evaporates, another 3-5 minutes.

Meanwhile, rinse the tomatoes, remove stems and halve or quarter. Peel radish peel and cut into thin slices. Mix the tomatoes with radish and beans (with remaining liquid) in a bowl.

For the marinade, mix all marinade ingredients and drizzle over the the vegetables. Let stand for about 15 minutes. Stir the salad gently before serving. Season to taste and serve garnished with parsley.
