- 3 Romaine lettuce
- ½ bunch scallions
- Lemon balm
- ½ Galia melon
- 1 Mango
- 100 grams Prosciutto (thinly sliced)
- 200 grams small Mozzarella
- 1 Tbsp lemon juice
- 1 Tbsp White vinegar
- 4 Tbsps olive oil
- salt
- freshly ground peppers
- 2 Tbsps Almond slivers (for garnishing)

Preparation steps
1.
Rinse romaine lettuce hearts, spin dry and set aside 8 large leaves. Cut the rest into strips.
2.
Rinse and dry scallions, cut into rings and combine with lettuce strips. Finely chop lemon balm leaves.
3.
Hlave melon and remove seeds and fibers, remove balls with a melon baller. Set aside melon shell.
4.
Peel and halve mango, pit and dice pulp finely.
5.
Cut ham into strips and combine with the rest of salad ingredients.
6.
Toast almonds in a dry pan until light brown.
7.
Prepare salad dressing. Scrape out melon pulp from the melon shell and puree with lemon juice and vinegar. Add oil and whisk well, season with salt and pepper. Toss salad with the dressing.
8.
Arrange large salad leaves on plates and top with salad. Sprinkle with toasted almonds and serve.
