- 1 Galia melon
- 2 sprigs mint
- 1 Orange
- 1 tsp freshly grated ginger
- 150 grams cream cheese
- salt
- freshly ground peppers
- Saffron for garnish (about 0.1 g)

Preparation steps

Halve the melon and remove the seeds. Remove some of the pulp with a melon baller for serving. Remove the remaining pulp, and add to a blender. Rinse and dry the mint. Remove the leaves and chiffonade. Halve the orange and squeeze the juice. Add the ginger, mint (minus some for garnish), orange juice, and cream cheese to the blender. Puree, and thin with up to 250 ml (approximately 8 ounces) of water until you reach your desired consistency. Season with salt and pepper, divide into bowls, and top with the melon balls.

Garnish with the reserved mint and the saffron threads.
