Cold Melon Soup
- ½ Charentais melon
- ½ honeydew melon
- 200 milliliters semi-dry white wine
- 3 Tbsps powdered sugar
- 2 Tbsps Lime juice
- 100 grams fresh Raspberries
- Lime zest

Halve melons, remove seeds and cut out 4 big and 16 small balls from each melon with a melon baller.
Peel remaining melon flesh and cut the flesh into cubes. Puree with the wine and 4-5 ice cubes. Stir in the sugar and lime juice and pour into 4 bowls. Sort and rinse the raspberries and put in the soup along with the melon balls and the lime zest. Serve immediately.
