- 2 Tbsps lemon juice
- 2 Tbsps Vanilla sugar
- 1 Tbsp Pine nuts
- 4 scoops Lemon sorbet
- mint (for garnish)

Preparation steps

Preparation time: 10 minutes + cooling time

Peel the melon, cut the flesh small and puree with lemon juice and vanilla sugar. Pour melon puree in dessert bowls, cover and chill in refrigerator at least 1 hour. Just before serving toast the pine nuts in a dry frying pan. Scoop two balls lemon sorbet into the cold dishes, sprinkle with pine nuts and garnish with mint leaves.
