Preparation steps
1.
Halve the cucumbers lengthways and cut four thin slices lengthways. Peel, deseed and roughly chop.
2.
In a mixer, blend the chopped cucumber, garlic, mint, and yoghurt to a fine purée, seasoning with ground black pepper, a pinch each of salt and sugar, a few dashes of Worcestershire sauce and a good squeeze of lemon juice. Add enough stock to achieve the desired consistency. Chill in the refrigerator for at least one hour.
3.
Meanwhile, thread the cucumber slices wavelike onto kebab skewers.
4.
Check the seasoning in the soup and foam slightly with the mixer. Divide between 4 drinking glasses. Drizzle with oil if desired, and serve garnished with the cucumber skewers.
