- For the cake
- 125 grams butter
- 5 eggs
- 1 pinch salt
- 175 grams sugar
- 150 grams Shredded coconut
- 150 grams Pastry flour
- ½ tsp Baking powder
- 2 Tbsps cocoa powder
- For the filling
- 1 Lime
- 250 grams Pineapple jam
- For the topping
- 150 grams dark Couverture
- 10 grams Coconut oil
- also
- Coconut flakes
- candied Pineapple
Preparation steps

For the cake, melt butter. Separate eggs and beat egg whites until stiff with salt. Mix yolks with sugar until creamy. Stir in coconut. Mix flour with baking powder and cocoa powder. Combine egg whites, flour mixture and egg yolks. Add melted butter. Pour batter into a springform pan lined with parchment paper. Bake in a preheated oven at 180°C (approximately 350°F) for 30 minutes.

Let cake cool in pan and then release. Cut in half crosswise. Spread bottom layer with jam and top with top layer. For the topping, melt crushed chocolate and coconut oil over a hot water bath while stirring. Pour over cake and garnish with coconut chips and candied pineapple pieces. Slice and serve.
