- For Coleslaw
- 2 cups green Cabbage (finely shredded)
- 2 cups red Cabbage (finely shredded)
- 1 medium carrot (peeled and grated)
- 1 tsp table salt
- ½ small onion (peeled and finely chopped)
- ¼ cup Mayonnaise
- 1 Tbsp Rice vinegar
- 1 Tbsp granulated sugar
- freshly ground Black pepper (to taste)
- Lettuce to serve (optional)
- For Club Sandwich
- 6 slices Wheat bread
- 3 Tbsps Mayonnaise
- 6 ozs deli or cooked Turkey
- 8 strips cooked Bacon (crispy)
- 4 leaves Romaine lettuce (rinsed)
- 1 ripe Tomato (rinsed and sliced)
- salt (to taste)
- freshly ground Black pepper (to taste)

For Coleslaw:

Toss cabbage and carrots with salt in colander set over medium bowl. Let stand until cabbage wilts, at least 1 hour and up to 4 hours.

Place wilted cabbage and carrots into the bowl and rinse thoroughly in cold water (ice water if serving slaw immediately). Pour vegetables back into colander, pressing gently to drain. Pat dry with paper towels. (Can be stored in a zipper-lock bag and refrigerated overnight. )

Place cabbage and carrots back into bow; add onion. Whisk mayonnaise, vinegar and sugar together; drizzle over cabbage mixture and toss well to coat. Season with pepper to taste. Cover and refrigerate until ready to serve. Serve on a bed of lettuce leaves, if desired.

For Club Sandwich:

Toast the bread lightly. Spread a thin layer of mayonnaise on one side of each slice.

Place half of the turkey and 4 strips of bacon on one slice mayonnaise side up. Place a second slice of toasted bread over the bacon, mayo side down.

Spread the top bread slice with mayonnaise and arrange 2 lettuce leaves and half of the sliced tomato on it. Season to taste with salt and pepper and top with remaining bread slice. Repeat the process for the second sandwich.

Carefully remove the crust from each sandwich and cut into triangles diagonally and serve with coleslaw.
